Has anyone created performance profile for any of the NGX models? Or, has anyone modifed an existing one for the NGX?

Yes and you can easily do the same by adjusting the fuel bias settings in the fsb_aircrafts.cfg file for the existing PMDG profiles based on a few test flights to reflect your particular flying patterns (short or long haul; multiple legs, etc.). Tweaking the bias settings is a shortcut to actually having to mess with the .prf fle. Then you can keep tweaking it as you like to achieve remarkably accurate predictions, outside of the occasional variations induced by incorrect wind predictions. Sounds good, how does the bias work? Is there a guide or tutorial to flightplanning with fsb anywhere?

Yes, it's on p.9 of the Data Files 2.pdf included with the download. Extract below (NOTE: these are notional values; your experience may vary):

ClimbFuelbias=+0.0
CruiseFuelbias=-2.2
DescentFuelbias=+1.5

Climb, Cruise and Descent Bias factors from the performance numbers. 2.2 or +2.2 means increase the performance numbers by 2.2 percent from what is in the default performance information for that aircraft. –2.2 means decrease by 2.2 percent.
